PROCEDURE
1. Prepare and heat phase A, heat 75 - 80 ˚C. During heating phase, sprinkle xanthan gum into water and stir until the gel is fully developed.
2. Prepare and heat phase B at 75 - 80 ˚C
3. Add B into A under maximum stirring (Rotor stator homogenizer) and maintain for 10 minutes to emulsify
4. Cool down to 30-35 ˚C.
5. Add ingredients in phase D. Mix until homogenous.
